Dr. Oz Shares Tasty Vegetable Recipes – Cauliflower Pizzettes, Yogurt Dip and Smoky Eggplant

April 7, 2014 : Dr. Oz did a poll asking viewers what their LEAST favorite recipes were and some of the veggies that made the list were brussels sprouts, cauliflower, zucchini, asparagus, and eggplant.  Dr. Oz loves these types of vegetables so he invited cheff Jennifer Stack (from the Culinary Institute) to come up with some tasty recipes that will turn some of your least favorite veggies into tasty treats that you can incorporate into your diet.

Smoky Eggplant & Yogurt Dip Recipe

Ingredients :

  • 1 medium sized eggplant
  • 1/2 red bell pepper (you should remove the seeds)
  • 4 tbsp of plain 2 percent fat Greek yogurt
  • 2 tbsp olive oil
  • 2 tablespoons of chopped parsley or cilantro
  • 3 minced garlic cloves
  • 1 tsp fresh lemon juice
  • 1/4 tsp kosher salt
  • Pinch of black pepper
  • 1/4 tsp ground smoked paprika (this ingredient is optional)

Preparation directions :

  1. Lengthwise cut the eggplant in half.
  2. Cut the bell pepper in half. Remove the seeds.
  3. Place the eggplant and bell pepper halves with skin side up and broil for 12-15 mins. Removed and allow to cool until you can touch the veggies.
  4. Warm olive oil in small pan and cook the minced garlic until slightly browned. Add the ground smoked paprika (if using) and remove from heat.
  5. Remove the skin from eggplant and red bell pepper.
  6. In a small bowl mash the eggplant, while removing the seedpods.
  7. Dice the red bell pepper into small pieces and mix in to the mashed eggplant.
  8. Add the browned garlic, olive oil, salt, pepper, and lemon juice.
  9. Enjoy your smoky eggplant.  Try serving with crackers or fresh veggies.

Cauliflower Pizzettes Recipe

  • 1 1/2 tbsp olive oil
  • 1 cauliflower head
  • 1/2 cup mozzarella cheese
  • Pinch of black pepper
  • 1/2 tsp oregano
  • 4 tbsp tomato sauce
  • 1 tbsp finely chopped fresh basil

Preparation directions :

  1. Set the oven to 400 degrees and preheat
  2. Coat a pan (lightly) with some olive oil
  3. Place the cauliflower up on its stem.  Now, slice off both sides of the cauliflower while leaving 2 inches of the middle section. Now slice (vertically) two slices of the 2 inch middle section.  You should have two round pieces of cauliflower that is one inch thick.
  4. Coat the one inch flat cauliflower slabs with olive oil and sprinkle oregano and pepper spices.
  5. Place the cauliflower slabs on to a baking pan and roast in oven until it is golden brown.  This should take approximately 25 minutes. Turn the cauliflower slabs over using a spatula and top with half of the mozzarella cheese. Put the cauliflower pizzettes back in the oven and allow the cheese to melt.
  6. Remove the cauliflower pizzettes from the oven and top with tomato sauce and remainder of cheese.  Put back in the oven until the remaining cheese melts.
  7. Cut the cauliflower slabs into pizza wedges and top with basil.
