Low Calorie Holiday Treat Recipes – Gingerbread Pound Cake and No Bake Cherry Chunk Cookies

The latter half of today’s Dr. Oz (December 17, 2013) episode featured Rachel Beller and her low calorie healthy alternative Holiday treat recipes.  She shared her low calorie eggnog, gingerbread poundcake, and no bake cherry chunk cookie recipes that will allow you to enjoy Holiday treats without all the guilt or possible weight gain that traditional Christmas treat recipes are associated with.  The average person gains 7 pounds over the Holiday season, and much of this is ado to the high calorie treats that so many people indulge in.  Here are the healthier alternative Holiday treat recipes that Rachel shared on today’s show :

Gingerbread Pound Cake

Just the name “Pound Cake” seems to make your clothes fit a bit tighter doesn’t it?  Well, it doesn’t have too.  A traditional slice of poundcake contains approximately 510 calories!!  Rachel Beller told Dr. Oz and the audience that a serving of traditional gingerbread pound cake also contains 48 grams of sugar.  She said this is equivalent to ten lollipops!  This is just for one slice of  pound cake, so you can easily see how the calories and lbs can add up quickly..  Here is the much healthier (and lower calorie) gingerbread pound cake recipe that Rachel Beller shared on today’s Dr. Oz :

Ingredients :

  • 1 1/4 cups whole wheat pastry flour
  • 1/2 cup molasses
  • 1/2 cup coconut palm sugar
  • 1/4 cup walnut oil
  • 1/2 cup low fat organic buttermilk
  • 1 organic egg
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp baking soda

Preparation directions :

  • Set the oven temp to 325 degrees and preheat
  • Mix all of the ingredients and blend until smooth
  • Pour the batter mixture into a cake pan (that has been greased and floured)
  • Bake for 1 hour.  You can tell if the gingerbread poundcake is done by inserting a toothpick into the cake.  The toothpick will come out clean when it is finished.

The healthier low calorie version only contains 120 calories per serving! (compare that to 510 calories of a traditional gingerbread pound cake recipe!)

No Bake Chocolate Cherry Chunk Cookies Recipe

A traditional recipe would contain approximately 360 calories.  Rachel’s healthy alternative no bake version only contains 110 calories!

Ingredients :

  • 1 1/2 cup of rolled organic oats
  • 1 cup of Bing dried cherries
  • 2/3 cup of whole wheat pastry flour
  • 3/4 cup of brown sugar
  • 1/3 cup of cocoa powder
  • 6 tbsp of Ghee butter
  • 3 oz of mini dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp of cinnamon
  • 1 tsp of baking soda
  • 1/2 tsp salt

Preparation directions :

Mix all of the ingredients noted above into bite sized cookie balls.  Place in the fridge and enjoy these no bake chocolate cherry cookies all throughout the Holidays.
