Pumpkin Bake-Off on Dr. Oz : Pumpkin Raisin Cookies, Chia Pumpkin Muffins, and Quinoa Breakfast Loaf

Dr. Oz loves the health benefits of pumpkin and October is the absolute perfect time to share recipes that correlate with the season change, the cooler weather, and the leaves changing into a gorgeous spectrum of autumn colors.  Listed below are the recipes that were shared during the Oct. 8, 2013 Dr. Oz program.

Dr. Oz Pumpkin Raisin Cookies Recipe

Pumpkin Raisin Cookies, Quinoa Breakfast Loaf, and Chia Pumpkin Muffin Recipes on Dr. Oz

Who doesn’t like cookies?  Well, maybe you…. if you are trying to watch your weight and/or live a healthier lifestyle.  Here is the Pumpkin Raisin Cookies recipe that was shared on today’s Dr. Oz :

Ingredients :

  • 1 cup of flour
  • 3/4 cup of raw sugar
  • 2/3 cup of old fashioned oats
  • 1/2 cup of pumpkin puree (you can use canned)
  • 1/3 vegetable oil
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of pure maple syrup
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of baking soda
  • 1/2 tsp salt
  • 1/4 tsp allspice
  • 1/2 cup of raisins
  • Pinch of flax seed

Preparation directions :

    1. Set the oven to 350 degrees and preheat
    2. While the oven is preheating line 2 baking sheets (large sized) with parchment paper
    3. Combine flour, cinnamon, oats, baking soda, salt, and all spice in a bowl.
    4. In another bowl whisk sugar,  canned pumpkin puree, vanilla, oil, and syrup.  Mix and then add the dry ingredients into the mixture.  Add in the raisins and mix thouroughly.
    5. Spoon batter onto baking sheet (measure about 1 generously sized portion of batter for each cookie).  Flatten each cookie into a round cookie shape. Add a pinch of sugar on to each of the pumpkin raisin cookies.
    6. Bake the cookies for approximately 17 to 20 minutes.  The cookies should be brown and slightly firm.

Remove from oven and enjoy!

Chia Pumpkin Muffins Recipe

Every enjoy muffins that you can enjoy without the guilt.  Here is the Chia Pumkin Muffins Recipe that was shared during today’s (October 8, 2013) episode.

Ingredients :

  • 1 16 oz can of organic pumpkin
  • 1 cup of whole grain or whole wheat flour
  • 1/2 cup of white flour
  • 2 eggs
  • 1/2 cup agave nectar
  • 1/4 cup of extra virgin olive oil
  • 1 tbsp vanilla
  • 1 tbsp chia seeds
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp nutmeg spice
  • 1/2 tsp salt
  • 1/2 cup of walnuts (you can also used pecans for this recipe)

Preparation directions :

    1. Set oven to 350 degrees and preheat.  Grease a muffin tin (as an alternative you can also line with parchment paper)
    2. Mix all of the dry ingredients in the list above in a large bowl.
    3. In another bowl mix all of the wet ingredients together.
    4. Mix and add the ingredients into muffin tins
    5. Bake in the oven that you have previously preheated for 25-30 minutes.

Pumpkin Quinoa Breakfast Loaf

Dr. Oz loves quinoa, so he absolutely loved this recipe that was shared on today’s show :

Ingredients :

  • 1/2 cup of quinoa
  • 1/4 cup of pumpkin (you can use canned)
  • 1/4 cup of banana (mashed)
  • 1 tbsp ground flaxseed
  • 1/2 cup of egg whites
  • 1/2 tsp of almond extract
  • 1/8 tsp of baking powder
  • 1/8 tsp of baking soda
  • Pinch of cinnamon, nutmeg, ginger, and cloves
  • Stevia to taste

Preparation directions :

  1. Set oven to 350 degrees and preheat
  2. Mix all of the ingredients noted above in a bowl
  3. Spray a mini loaf pan with cooking spray
  4. Add the mixture into the mini loaf  pan
  5. Bake the breakfast loaf for 25 minutes (cover with aluminum foil during baking)
  6. After baking for 25 minutes remove the aluminum foil and bake for 5-10 more minutes
  7. Slice the Pumpkin Breakfast Loaf into two pieces and spread 1 tbsp of nut butter onto each piece.
