Kirstie Alley Recipes on Dr. Oz – Breakfast Taco’s, Tortilla Soup, and Beer Basted Chicken

Actress Kirstie Alley came on to the show to talk about her ups and downs (yo-yo) dieting roller coaster that she has been on over the years. You have likely seen her after she lost a lot of weight, only to gain it all back.  Throughout all of her battles with weight loss she has learned a lot about health and nutrition.  On her September 6, Kirstie episode Kirstie shares the tips and secrets that she has learned to lose weight once again.  However, this time she plans to keep it off!  During this segment on the episode Kirstie Alley shares some of her favorite recipes that she eats regularly to not only help her lose weight, but to keep it off long term.  She feels that you can’t feel deprived and the breakfast taco, tortilla soup, and beer basted chicken recipes that she shared are some of her favorites to help feel satisfied while containing fewer calories and fat than traditional recipes.

Breakfast Taco Recipe

Ingredients

  • 1 egg
  • 1 egg white
  • 1/2 diced jalapeno
  • 1/2 avocado (sliced)
  • 2 corn tortillas (use the smaller size tortillas)
  • Salsa

Preparation Directions

  1. Heat up the tortilla shells until they are warm
  2. Combine all the ingredients (except salsa) listed above and cook on medium heat
  3. Add the ingredients to the two tortilla shells that you warmed
  4. Top with salsa and enjoy

Tortilla Soup Recipe

Kirstie Alley told Dr. Oz that she tries to keep her daily calorie intake at around 1400 per day.  She has noticed that her caloric intake at this level is what she loses weight the easiest.  She said that when she has fewer than 1400 calories per day it is harder for her to lose weight because her metabolism slows down.  Here is her tortilla soup recipe that meets her diet criteria and satisfies her appetite at the same time.

Ingredients :

  • 1 pound chicken breast
  • 1 onion (halved and cut into slices)
  • 4 cups of chicken broth
  • 2 diced tomatoes
  • 1/2 avocado (cut into slices)
  • 1 diced jalapeno
  • Cilantro
  • Lime
  • Some of your favorite seasonings (optional)
  • Tortilla chips (optional)

Preparation directions

  1. Mix up the chicken broth and seasonings in a pot and heat to boil
  2. Add the other ingredients mentioned above into the bot and reduce the heat to simmer for 15-20 minutes
  3. Remove the chicken breast from the pot.  Allow the chicken to cool and then shred into small pieces.  Add the shredded chicken pieces back into the pot and let simmer for several more minutes.
  4. Serve while hot.  While optional, you can add a small amount of tortilla chips for a “crunch factor”

Beer Basted Chicken

Kirstie Alley said that all throughout the week her schedule is hectic so she doesn’t have a lot of time too cook.  This is why she cooks most of her weekly meals on Sundays and either freezes them or puts them in the fridge for the week.  Having your meals pre-cooked is a great way to stick with your diet plan and keep you from to resorting to chips or other diet busting foods that are quick and easy.

Here is the beer basted chicken recipe that she shared on the show :

Ingredients :

    • 1 chicken (Kirstie recommends buying organic chicken)
    • 1 can of beer
    • 1/2 lb new potatoes
    • 6 chopped garlic cloves
    • 1 tbsp butter
    • Extra virgin olive oil
    • Salt
    • Pepper

Preparation directions :

    1. Preheat your oven to 350 degrees
    2. Apply a rub of salt, pepper, and garlic to chicken breast
    3. Bake chicken breast for 30 minutes (occasionally baste the chicken with beer)

Serve with some baby arugula and sprinkle on some shaved Parmesan cheese
