Valerie Bertinelli made a guest appearance on today’s Dr. Oz show.  She looks as beautiful as ever and she has a brand new cookbook out which is titled “One Dish At A Time”, stemming from her sitcom “One Day At A Time” from the 70’s.  Very clever title if you ask me!  During this segment she shared her Ribollita Soup and Marinated Lamb Chops recipe..  I felt this was the perfect time of the year for a good soup recipe… Definitely will try this one out.  Also be sure to check out Valeries Anise Twist Cookies, Chicken Sambal Recipes that she share with on today’s Dr. Oz.  Also be sure to check out when is the Best Time Of The Day To Lose Weight segment of today’s show.

Valerie Bertinelli’s Ribollita Soup on Dr Oz

Ingredients :

  • One chopped carrot
  • One chopped onion
  • One chopped rib celery (with leaves)
  • 1 28 oz can of whole tomatoes
  • 1 tbsp of olive oil
  • 3 cups of veggie broth
  • 1/4 tsp dried thyme
  • One 10 oz can of cannellini beans
  • 1 chopped bunch of kale (without the stems)
  • 2 slices of peasant bread
  • Parmesan cheese
  • Salt
  • Pepper

How To Prepare The Ribollita Soup Recipe Shared on the Dr. Oz Show

  • Saute vegetables in a stock pot on low.  Stir frequently until the vegetables are soft
  • Add the can of tomatoes
  • Add dried thyme and broth
  • Bring to boil
  • Simmer for 12-15 minutes
  • Add salt and pepper (to taste)
  • Add Kale and simmer an additional 15 minutes
  • Add the Cannelini beans and bread
  • Drizzle a small amount of olive oil in each bowl
  • Top the Ribollita soup with Parmesan cheese
  • Serve and enjoy

I love all the ingredients to this recipe.. I really don’t see how you can go on.  This will be delicious on those chilly autumn and winter nights!

Valerie Bertinelli’s Marinated Lamb Chops Recipe

Here is another recipe that Valerie shared with Dr. Oz on today’s show.  She called this dish as “Wolfie’s Marinated Lamb Chops”.

Wolfie’s Marinated Lamb Chops Ingredients :

  • 12 single cut lamb chops
  • 1 cup of plain yogurt
  • 1/4 cups of freshly squeezed lime juice
  • 1 tablespoon of grated ginger
  • 4 minced garlic cloves
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1/4 teaspoon of cayenne pepper
  • 1 1/2 teaspoon of kosher salt
  • 1/4 teaspoon of black pepper
  • Pinch of cinnamon

How To Prepare Wolfie’s Marinated Lamb Chops

  • Add the lamb chops to a glass baking dish
  • In a bowl, mix turmeric, cumin, ginger, lime juice, garlic, yogurt, salt, pepper, cayenne, and cinnamon
  • Add the mixture to top of of lamb chops. Distribute evenly to coat each lamb chop
  • Marinate the lamb chops for 8 hours.  Do not exceed 24 hours
  • Preheat grill on high temp for 5 minutes
  • Reduce heat to medium and add lamb chops to grill
  • Over medium heat on the grill cook 6 minutes on each side assuming the lamb chops are 1 inch thick.  If they are 3/4 inch thick reduce cooking time to 4 minutes on each side.
