Yacon Syrup Recipes on Dr. Oz : Yacon Chicken Glaze, Salad Dressing, and Caramel Corn

The entire first half of today’s Dr. Oz show was about what is Yacon Syrup and how this all natural sweetener can help you to lose weight.  Dr. Oz gave his own recommendations as well as the opinions of other medical experts about the consumption of Yacon and if you should be replacing sugar in your diet with this all natural sweetener.  During this segment on today’s show Dr. Oz invited Chef Sue Baldassono on to the show to share some simple recipes that utilize Yacon Syrup.  She shares a caramel corn, glaze chicken, and salad dressing recipe that is made with Yacon Syrup in place of sugar.  Enjoying these delicious recipes has never been so “guilt free!”

Yacon Syrup Caramel Corn Recipe

Ingredients :

  • 3/4 cup of yacon syrup
  • One 5 oz bag of popcurn
  • 4 tbsp butter (1/2 of a stick)
  • 1/2 cup of sesame seeds
  • 3 Sheets of Nori Seaweed
  • 1-2 tsp of sea salt

Preparation directions :

  • Toast and rip the Nori Seaweed into little pieces
  • Add popcorn to a bowl
  • Melt the 4 tbsp of butter over low heat and add in the Yacon syrup.  Once the mixture is warm and blending smoothly, pour over popcorn and toss to spread the mixture evenly.
  • Add the sesame seeds
  • Add the Nori Seaweed pieces and toss to mix it all together
  • Cool and serve

Yacon Syrup Salad Dressing


  • 3-4 tbsp Yacon Syrup
  • 1 tbsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp ginger
  • Sea salt & Pepper (to taste)

Mix all of the ingredients noted above together and your salad dressing recipe is complete!

Yacon Glaze Grilled Chicken

Ingredients :

  • 1 cup of Yacon syrup
  • 5 chicken breasts
  • 2/3 cup of vinegar
  • 2 tbsp lemon juice (fresh is preferred)
  • 2 tbsp garlic (minced)
  • 3-4 tbsp of soy sauce
  • 1 tsp of ground ginger (fresh preferred)

Preparation directions :

  1. Cook your chicken breasts however you enjoy them the most
  2. Mix all of the remaining ingredients noted above and pour them over the chicken breasts
